Amasi Curried Tripe
A delicious twist on a South African Favourite by Dinner at Matloha's

In a large saucepan, preferably cast iron, add the oil and heat over medium heat, then add the onion and sauté for a few minutes until just soft.
Add the coriander, cumin, stirring constantly, until the spices are fragrant.
Add all the tripe, cow heels and remaining ingredients with only one cup of First Choice Amasi. Stir everything together, cover with enough water and bring to a boil.
Cover the pot and simmer over medium heat for 2-3 hours or until tripe and heels are tender.
Stir in the reserved First Choice Amasi and simmer uncovered for 5 minutes, stirring regularly.
Squeeze the juice of lime and mix it in. Remove from heat, sprinkle with fresh coriander.
Serving Suggestion: with pap and salsa.
