Lemon Custard Meringue Waffles
The best waffles you've ever had!
Preheat the waffle iron to the regular setting.
Sift together the flour, baking powder, salt, and sugar in a bowl.
In a separate bowl, whisk together the First Choice milk, 2 egg yolks, and vanilla.
Pour over the dry ingredients and very gently stir until halfway combined.
Pour in the melted butter and continue mixing very gently until combined.
Beat the egg whites until stiff. Slowly fold them into the batter, stopping short of mixing them all the way through.
Scoop the batter into your waffle iron in batches and cook until it is deep golden and crisp.
Mix all the ingredients together in a bowl until smooth and microwave for 4 to 5 minutes, stirring every minute, until it starts to thicken.
Add the egg whites, cream of tartar and vanilla essence together in a bowl and beat with an electric mixer until soft peak stage.
Add the sugar, a spoon at a time while still beating the egg whites.
Beat untill it forms, glossy, stiff peaks.
Spread lemon custard over the waffle.
Top with meringue.
Bake the meringue with a kitchen blowtorch until it is golden brown and crisp.
You can also place another waffle on top to make a lemon custard meringue waffle sandwich!
