Amasi Rusks

Ingredients:
 700 g cake flour
 50 ml baking powder
 5 ml salt
 5 ml ground cinnamon
 210 g soft brown sugar
 80 g sunflower seeds
 60 g coconut
 330 g muesli
 50 g pecan nuts, chopped
 300 g First Choice Butter
 350 ml First Choice Amasi
 1 egg

Preheat the oven to 180 °C and grease a 35 cm x 45 cm rusk pan very well.

Mix the flour, baking powder, salt, cinnamon, sugar, sunflower seeds, coconut, muesli and pecan nuts together in a large bowl.

Melt the First Choice Butter in a small saucepan.

Mix the melted butter and First Choice Amasi together, add the egg and mix well. Add to the dry ingredients.

Mix well to make a firm dough.

Press the dough into the prepared rusk pan and cut/mark into portions.

Bake for about 25 minutes in the preheated oven until golden brown and cooked. Cool for at least 15 minutes.

Cut into slices and spread them in a single layer on two large baking trays, with enough space between them for air to circulate and to dry the rusks.

Dry out in the oven at 80 °C for about 3 hours, turning the rusks every hour.
